Bean and Grilled Vegetable Salad





It's really hot here right now, and that has me making salad for dinner. I am kind of a grab this and a little of that kinda cook, so I'll guesstimate quantity for you guys.

2-4 big handfuls of trimmed green beans (cooked al dente and cooled)

1 can of chick peas rinsed

1 can of cannellini beans rinsed

1 plum tomato chopped (grilled)

1/2 red pepper sliced (charred on the grill)

1/2 yellow pepper sliced (charred on the grill)

cilantro (large handful chopped) I like it, but it can be scaled down or omitted all together

1 garlic clove minced

1 handful of crumbled feta cheese

salt and pepper to taste

olive oil and red wine vinegar mixed about 3:1

Mix the garlic, S&P, olive oil and red wine vinegar in a jam jar and shake vigorously.

Assemble the vegetables, feta and beans in a large salad bowl and pour dressing over the top.

Gently toss using your hands until all is coated.

Serving suggestion:

Goes great with grilled chicken, or assemble and roll into a tortilla to go. It tasted better the next day.
