Migrating XP 32bit users with roaming profiles to Windows 7 64-bit with Folder Redirection

Hello all.

I am looking for a nice efficient way to move our users' roaming profiles from Windows XP 32-bit to Windows 7 64-bit.

We are currently running a Windows 2008 server environment, however, since the roaming profiles are a bit large and cause some issues (some users are using 3 machines with the same profile), we would like to move to a Folder Redirection solution for files (with offline sync if possible) and roaming for just the most basic of settings.

Is there anyway to do this without completely rebuilding the profile or taking too much space on the file server?

Edit: We are also going to deploy Windows 7 using MDT and WDS if that helps.
