phreakwars Posted May 26, 2008 Posted May 26, 2008 I love taco's !! Taco Bell however, isn't one of the ones I like. Taco Del Mar, Taco John's.. oh HELL YEAH.. I also like authentic Mexican taco's which differ from what most American's are used to. My (Hispanic) dad's version of taco's was different as well, he liked to use sardines to make tacos... ick !! My (white) grandma also made a decent version of tacos. Growing up with a dual Hispanic heritage and American heritage, I found that inevitably, both cultures could be combined to give me the WHITEY and HISPANIC versions of a taco combined into a tasteful creation of awesomeness. So this post will be the official TACO RECIPE post of GF I'll start out with my version [ ]2lbs of ground beef (90% lean or better) [ ]1 can of "LA PREFERIDA" refried beans con chorizo (Chorizo is Mexican Sausage). [ ]2 tablespoons of McCormick HOT chili seasoning [ ]1 lb Kraft AMERICAN cheese ( diced and cubed ) [ ]1 medium tomato [ ]1 medium onion [ ]1 head lettuce [ ]1 Jar/Bottle of La Victoria Salsa Ranchera or Salsa Brava [ ]1 pkg of flour or corn tortillas Cook and chop hamburger till done, add chili seasoning and 1/2 a can of the beans. Warm tortillas as directed Top with other ingredients Pig out !! Tacos are so easy to make and take very little time to prepare. INGREDIENTS 1 1/2 pounds boneless beef top sirloin, cut into thin bite-size slices 1/2 teaspoon salt 1 teaspoon freshly ground black pepper crushed red pepper to taste 1 lime 1 (28 ounce) can tomatillos 2 fresh jalapeno peppers, seeded 4 tablespoons canola oil, divided 1 (10.5 ounce) can beef broth 12 (6 inch) corn tortillas 1/2 large onion, chopped 2 tomatoes, chopped 1 avocado - peeled, pitted and sliced 1 bunch fresh cilantro, chopped 1 lemon DIRECTIONS Place sliced meat into a shallow bowl, and season with salt, black pepper, and crushed red pepper. Squeeze the lime juice over the meat, and turn until evenly coated. Cover, and refrigerate for 30 minutes. In a blender or food processor, combine tomatillo and jalapeno. Puree for 15 to 20 seconds, or until thick. Heat 1 tablespoon oil in a large skillet over medium high heat. Carefully pour in tomatillo mixture. Cook, stirring frequently, for 5 minutes. Stir in beef broth. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon. Transfer mixture to a serving dish. Heat tablespoon oil in a large skillet over high heat. Stir in 1/3 of the beef, and saute for 1 minute. Transfer to serving dish. Repeat with remaining beef. Meanwhile, heat tortillas in the oven or microwave, according to package instructions. To serve, place two tortillas on top of each other. Add desired amount of meat, spoon over some tomatillo mixture. Top with onions, tomatoes, avocado and cilantro. [ ]Corn tortillas [ ]Canola oil [ ]Avocado [ ]Large tomato [ ]Lettuce finely cut [ ]Mexican blend cheese (I prefer Sargento Mexican blend pre-shredded cheese to Kraft) [ ]Refried beans [ ]6 slices of American cheese Frying the tortillas into a nice taco shape is the most time consuming thing. Mince fresh garlic and onion into ground beef while cooking. After meat is cooked, rinse in hot water (this gets rid of the majority of the fat), then lightly season with a blend of garlic and onion salt. Put a splash of milk in the refried beans and melt the American cheese in it. Line the taco shell with the bean mixture, then put the Mexican blended cheeses on the hot beans, then the ground beef, lettuce, tomatoes, and avocado. Ohhh....my stomach is growling!!!! Quote

The way I was taught by my dad to make it, is: [ ]2 medium avocados [ ]1 medium tomato [ ]4-5 jalape?os [ ]1/2 lime [ ]1/2 medium sized onion [ ]1 teaspoon garlic salt Boil your tomato and jalape?os together until the jalape?os just start to turn a lighter shade of green, at this point the tomato skin should just about be coming off on it's own. drain water and place in a bowl and mash with potato masher (a blender will work too, but don't liquefy, you want those chunks). after it's all mashed up, stir in the fresh onion (diced) and the garlic salt (add more or less garlic salt to suit your tastes). Well anyways, what you will end up with, are 2 things.. a base for your guacamole, OR an awesome hot sauce/salsa all on it's own with out the avocado.. But anyways, mash you avocado up in a seperate bowl, and slowly add the salsa you made while mixing. You don't want your gwak too runny, you want it nice and creamy, I usually have enough salsa left over after making it to use for something else as well. Anyways, after all this, squeeze the 1/2 lime into the mixture to preserve color and either refrigerate or eat right away. Guacamole doesn't keep very long, maybe a day or 2 even with the lime in it, but DAMN is it good on tacos !! P.S. MAKES A GREAT CHIP DIP TOO !! Frying the tortillas into a nice taco shape is the most time consuming thing. I fry mine in a pan of oil and use 2 forks to fold them while cooking. Old Salt Posted June 2, 2008 Posted June 2, 2008 When I lived in South Texas, we made nachitos at home. Quick little party item. Corn tortillas cut into triangles, deep fried top with refried beans, cheese and a slice of jalapeno bake in the oven until the cheese is melted. Nice snack, but wash your hands after slicing the peppers. Quote
