phreakwars Posted June 13, 2008 Posted June 13, 2008 Don't ya just love rotisserie style chicken? But hell, who owns a rotisserie? Not me. So what I do, is follow a nice recipe I got a few years back, you will need. [ ]2 tablespoons and 2 teaspoons salt [ ]1 tablespoon and 1 teaspoon paprika [ ]2 teaspoons onion powder [ ]2 teaspoons dried thyme [ ]2 teaspoons white pepper [ ]1 teaspoon cayenne pepper [ ]1 teaspoon black pepper [ ]1 teaspoon garlic powder You'll notice, that these are all dry ingredients, from that you can deduce that all these ingredients are gonna come together to make a rub. Usually when I make this rub, I'll generally make tons of it and place it in a shaker for later use. But anyways... on to the chicken.. Basically, what you wanna do, is get yourself a whole chicken, set the oven to 250 degrees, place the rub generously all over the chicken, place chicken on a rack pan, and bake till the bird reaches an internal temp of about 180 degrees. (4 hours or so usually does it) baste your bird about a half hour before it reaches 180 degrees. The meat should just fall off the bone, and the chicken tastes OH SO GOOD. It's a very simple, cheap, and fullfilling meal. Optionally, you can also use the rub mixture on your Thanksgiving turkey as well. The only thing I hate about it when I make this, is the smell that comes from the oven for a few hours... it literally drives you crazy from that awesome aroma that comes from the oven. I even stuffed the little bitch...it was looking amazing. Anyways, at the time we had a giant german shepard named Koda that was a a little rambunctious on the deck. He disconnected the rotisserie. It was so fukking burnt the leg bone just snapped and broke off, totally charred. I could have cried. Quote

I can cook about three fifteen pound turkeys at a time. I cooked a duck... once. It was so greasy that it fell apart on the stake. We have a smoker out front at my job, we smoke BBQ all the time year round. This last Thanksgiving I did my Turkey in the smoker with this rub. You ABSOLUTELY have to try it !! . .
