Dual boot question win7 & windows 2008 r2

i want to install my new laptop having 2 disks: 1 disk Windows 7 Pro and disk 2 windows server 2008 r2 by using a boot manager. After having installed Windows 7 should I install Windows Server 2008r2:

1. when already booted up under windows 7 starting windows server 2008 r2 DVD by executing setup.exe or

2. after a shutdown from windows 7 just booting from the windows server 2008 r2?
