Zero Touch Migration - Outlook creates new profile

We are in the process of deploying Windows 7 and Office 2010 from XP and Office 2003 to 3,000 machines via an inplace migration using SCCM 2007.

When the user logs into the new Windows 7 machine and starts Office 2010, Outlook creates a new "Default Profile" and takes the old profile and renames it to "BACKUP OF Default Profile". This would not be a problem, but outlook does not use the old profile, which has all the signatures and shared mailboxes, instead it uses the newly created Default Profile.

How do we automatically prevent Outlook 2010 from creating a Default Profile when a user logs in, if a Default Profile already exists? How do we make Outlook 2010 use the existing Profile? Note - this is a Zero Touch Deployment.
